摘要:啤酒是常见的饮料酒,其生产过程分为麦芽制造、麦芽汁制造、前发酵、后发酵、过滤灭菌、包装等几道工序。本设计是为日产25吨啤酒而进行的初步工厂设计。根据毕业设计大纲和设计任务要求,进行了啤酒工艺流程的选择和论证。对啤酒工艺流程中物料衡算、热量衡算、水平衡、耗冷量进行计算,对标准设备进行了计算和选型,同时对主要附属设备也进行了计算和选择。最后,对成本和运行进行了合理分析,经计算得此啤酒厂年利润为106.2万元。

The Design of Beer Production Plant for 25 tons per Day

Abstract: Beer is a common wine of beverage that the production process is divided into the manufacturing of malt and malt juice, before fermentation, after fermentation, filter sterilization, packing etc. This design was a preliminary one with the output of 25 tons per day for beer. The beer process was selected and demonstrated according to the outline of design and the requirements of graduate design. The calculation was processed on material balance, heat balance, water balance, consumption of cold and the selection of standard equipment. Meanwhile, the main ancillary equipment had also been calculated and chose. Finally, the run and costs were analyzed reasonably. The annual profits was 1.062 million yuan by calculation.
